I'm planning to make mistake cookies[1] to take for Christmas. I may end up making two batches. Any ideas on what to do with a leftover egg yolk or two? I hate to just toss them.


[1]I Thought I'd posted this before, but I can't find it now. They're tasty, gluten-free, soy-free, and dairy-free.


Mistake Cookies

1 cup firmly packed brown sugar
1 egg white
1 cup chopped pecans

Beat egg white well. Add brown sugar and nuts. Drop onto a baking sheet.
Bake at 300? for 30 minutes, or until crusty.

My peanut butter cookie recipe uses one egg and one yolk. (I can never think what to do with the leftover white.) They are neither gluten-free nor dairy-free, though, if those are important cookie characteristics.

Not for me; I mentioned it because some people who care read my LJ. I think a coupl eof my relatives don't do dairy, but not every single thing I take has to be edible by everyone.

My brother won't eat nuts, but they aren't coming this year; I can't remember whether anyone else doesn't, but I'm mainly making these because they're one of my favorites and Mom isn't making them this year. I may make her Christmas tree cookie-press cookies, too. (Apparently, the cookie-making hat is being passed. At least she's still doing her chocolate chip cookies.)

Sorry for not getting back to you. I just google for recipes usually, and use whichever one seems most reasonable to me. I doubt either would travel well, though.
